(Exchange, SharePoint, Skype for Business, etc.) As long as the user has an active subscription, they will have these rights and you would not need to also purchase the CALs for the servers covered by these rights. Exchange Enterprise CAL, they do not need an Exchange Server Enterprise license. You can also look into Secure Productive Enterprise license variant. You do not need the cal Bridge with M365. For O365/M365 suites you will have On Premise Access Rights for on premise equivalents of each server. Yes, M365 contains all core cal/Enterprise Cal licenses.
